Baking with Bananas

I have another recipe to share with you guys! I recently discovered Ashley’s blog, My Food N’ Fitness Diaries. A few weeks ago, I saw a guest post on her blog by Jana at Newly Wife Healthy Life for a banana bread recipe. Bananas are probably my favorite fruit of all time, and banana bread has a special place in my heart. I love it – but I love making my favorite foods even healthier. Once I found her recipe, I was dying to try it. So this past weekend, I did!

Preheat your oven to 350 degrees and grease your bread pan with the cooking spray or softened butter.

Mix the flour, baking soda and powder, and salt in a separate mixing bowl. Set aside.

Using a hand mixer, mash up your bananas and whip until smooth. I used two bananas that were VERY ripe, so mashing them was easier. I suggest you use either ripe or JUST over ripe bananas – the bread will be sweeter.

Add the sugar (brown and white), yogurt, vanilla, and eggs to the bananas and mix until smooth. I didn’t have vanilla yogurt, so I ended up using honey.

Then, in batches, add the dry ingredients and mix until it’s all incorporated.

Pour your yummy batter into the pan and bake for 40 – 45 minutes. Test it out by inserting a toothpick – when you pull it out and it’s clean, it’s done!

This banana bread is great because it’s the traditional banana bread flavor, with the added health benefit of whole wheat flower and protein from the Greek yogurt, with no butter or oil.

It’s super yummy with nut butter smeared on top, which is how I had it with my dinner last night, which was an egg scramble with feta cheese and tomatoes. With some added bananas!

or crumbled up on top of overnight oats in a jar! Hmmmm….so good!
