WIAW #18: Busy Bee {What I Ate Wednesday}

It’s been a busy couple of days over here in Sarah land! I had a nice 12 hour work day on Monday, but don’t worry, it wasn’t all work – there was plenty of fun, too. It was my company’s annual offsite meeting and awards dinner. The meeting was held at the Hyatt near Logan Airport. We had some fantastic views of the city the entire time. It was lovely to get to enjoy the city skyline and sip on some cocktails.

Anyway, on to the food. Today’s What I Ate Wednesday is a collection of eats from Tuesday. If you want to know more about WIAW, head over to Jenn’s blog, Peas and Crayons. This month, the theme is Summer Staples.


It’s funny that this month’s theme was Summer Staples, because one of my staples of the Summer is smoothies! After a few too many cocktails the night before, I was craving some healthy fruits in my life, so I mixed up a smoothie to go. In the mix: 1 frozen banana, a small handful of frozen strawberries, a few ice cubes, 1/2 scoop of chocolate protein powder, 1 tb. PB, and enough almond milk to make it smooth. Perfection.


I don’t know why I have neglected my old love of cottage cheese, but I seemed to have forgotten recently how much I like it. I used to eat this stuff in college like it was my job! It’s the perfect little high protein snack. I picked some up on a whim at the store this past weekend and the love affair has been rekindled. Lunch was some cottage cheese with Kashi crackers and cucumber slices for dipping. Plus a honey Chobani with blueberries and some Wild Harvest granola I picked up at the store as well.


After taking a couple days off of half-marathon training due to the move, it’s been nice to get back into this week. Even though I missed my long run this weekend, it all sort of worked itself out because this week is a cutback week. So instead of cutting back, I’m just going to do my long run from last weekend this week. Perfect. Tuesday night I finally figured out how to program 400m repeats using my Garmin. I’m a little late to the game…I know. Steph showed me last weekend on hers and my life has been changed! After a good 6×400 workout, I headed home to shower. I was supposed to meet up with a friend for dinner, but there was a last minute change of plans, so I was on my own for dinner. I whipped up some quinoa with roasted sweet potato, leftover chicken breast, steamed broccoli, and parm cheese. Easy, quick, and delicious.


I finished the night with a bowl of peach mango Oikos Frozen Greek Yogurt topped with some pieces of a frozen Hershey bar while watching the Olympics.

Readers: What are your summer staple foods or meals? Do you always have dessert, or just sometimes. I usually don’t have it every night, but some nights I splurge a little bit.

I love smoothies in the Summer time, definitely one of my staple foods!! AS for dessert, sadly my body thinks it needs a little something sweet after dinner EVERY night. I am trying to cut it down but it is hard!!

Smoothies and fresh fruit are definitely some of my summer staples! I need to try out that Oikos frozen yogurt – YUM!

it’s not my favorite frozen yogurt, but it’s not bad. Would probably be good with toppings like granola, like a little frozen breakfast

Your smoothie sounds delicious. I love how versatile smoothies can be, and how for the most part always fill you up!!

Oh I alwayssss have some sort of dessert after dinner. My day just isn’t complete without it haha.
